Cooked winter squash is a delicious, nutritious and very versatile ingredient. Depending on what you add to it, winter squash can be sweet or savory.
Winter squash can be easily made into a side dish or a soup.
Children had loads of fun squishing cooked squash into a mashed squash dish that included apples, cider and a touch of garlic.
The following week, they used cooked squash as a main ingredient in a yummy soup with onions, garlic and veggie stock.
Both recipes provided an opportunity to use a potato masher to squish some squash. They loved squishing squash and loved eating squished squash even more. When children have a hand in preparing their food, they are more likely to eat it. Winter squash is a huge hit among the children at Mount Kisco Child Care Center.
